COPYCAT CHILI’S SOUTHWESTERN EGGROLLS


INGREDIENTS

· EGG ROLL WRAPPERS OR LOW CARB TORTILLAS

· 1 LB CHICKEN BREAST

· 10 OZ CHOPPED SPINACH (I USED FROZEN)

· 1 CAN BLACK BEANS, STRAINED

· 1 CAN OF CORN, STRAINED

· 1 RED BELL PEPPER, DICED

· 2 OZ SHREDDED LITE MOZZARELLA CHEESE

· SALT & PEPPER

· 1/2 TSP CHILI POWDER

· 2 TSP CUMIN

· 1 TSP GARLIC SALT

DIRECTIONS

1. DICE UP CHICKEN INTO SMALL PIECES AND COOK IN A PAN (I SPRAY WITH OLIVE OIL) UNTIL FULLY COOKED. ADD SALT & PEPPER

2. IN A LARGE BOWL, HEAT UP FROZEN SPINACH 3-4 MINUTES. ABSORB EXCESS LIQUID WITH A PAPER TOWEL

3. MIX IN CORN, BEANS, AND RED PEPPER.

4. MIX IN COOKED CHICKEN & CHEESE

5. ADD IN CUMIN, CHILI POWDER, GARLIC SALT, SALT & PEPPER

6. DIVIDE MIX EVENLY INTO WRAPPER OF CHOICE (I LIKE TO USE LOW CARB TORTILLAS AND EGG ROLL WRAPPERS)

7. BAKE AT 400 FOR 15-20 MINUTES, FLIPPING HALFWAY
