APPLE BREAD

INGREDIENTS

· 1 BANANA, MASHED

· 2 EGGS

· 1/3 CUP UNSWEETENED APPLESAUCE

· ½ CUP CASHEW OR ALMOND MILK

· ¼ NONFAT GREEK YOGURT

· 1 TSP VANILLA

· 2 TSP CINNAMON

· ½ CUP SWERVE BROWN SUGAR

· 2 CUPS KODIAK BUTTERMILK MIX

· ½ TSP SALT

· 1 MEDIUM APPLE, DICED (I USE HONEY CRISP)

· STREUSEL TOPPING:

o 1 TBSP BUTTER

o ¼ CUP FLOUR

o 1 TSP CINNAMON

o 2 TBSP SWERVE BROWN SUGAR

DIRECTIONS

1. PREHEAT OVEN TO 350

2. MASH BANANA AND ADD EGG, APPLESAUCE, MILK, GREEK YOGURT AND VANILLA.

3. MIX IN CINNAMON, SWERVE, KODIAK MIX, AND SALT.

4. ONCE COMBINED, MIX IN DICED APPLE

5. DIVIDE INTO 3 LOAF PANS (OR ONE LARGE LOAF PAN)

6. MAKE STREUSEL TOPPING BY MELTING BUTTER AND THEN MIXING IN FLOUR, CINNAMON AND SWERVE. TOP EACH BREAD

7. BAKE FOR 40-45 MINUTES OR UNTIL TOOTHPICK COMES OUT CLEAN.
